Mint Blossoms----Double YUM! YUM!


1 1/4cups sugar
3/4cup LAND O LAKES® Butter, softened
1egg
1teaspoon vanilla
1 3/4cups all-purpose flour
1teaspoon baking soda
1/4teaspoon salt
48mint meltaway candies

Combine 1 cup sugar, butter, egg and vanilla in large bowl. Beat at medium speed until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Cover; refrigerate until firm (30 minutes).
Heat oven to 375°F. Shape dough into 1-inch balls; roll in remaining sugar. Place 2 inches apart onto ungreased cookie sheets.

Bake for 7 to 9 minutes or until very light golden brown. Remove from oven; immediately press
1 mint candy in center of each cookie. Remove from cookie sheets; cool completely.

Yield: 4 dozen cookies
